I wonder if having more “honest mistakes” in man-made videos, like mispronouncing a word and then correcting yourself instead of editing it out, creates the authenticity that people subconsciously crave.

Very likely, plus (my guesses) recognizable-but-not-forced speaking accents and conventions (like "correct" adjective order), facial expressions and voice tone that match the words and intended message, idiomatic expressions or word usage based on connotations (not denotations), etc
