We always have had 2 day shipping for a premium amount.
We just got an order in a few minutes ago where it says ship by tomorrow and delivery is guaranteed by Sunday. I’ve never seen that…normally these wouldn’t be due to arrive until Tuesday (which is why I loved Thursday or Friday 2 day orders…because normally we could send normal ground advantage and it would still get there in time).
Why would this be happening?
It does say claims protected…but obviously not ODTR since it’s an expedited/premium shipping option. Is this SSA that is causing this (this meaning counting weekend days as actual business days)?

But does Fedex even deliver normal “Fedex Home Delivery” on Sundays?

Dunno, I don’t use Fedex.

That would depend on how you have your operating hours set up with Amazon and how you set up SSA.
We do not have that issue because we made sure we only set up Standard Shipping on our SSA template with USPS Ground Advantages.
You might need to review your settings with how your different premium settings are controlled.

Do FedEx deliver on a Sunday?
FedEx delivery times and store hours
Typical FedEx delivery hours are 8 a.m. to 8 p.m., Monday–Friday and on Saturday and Sunday for residential deliveries except for FedEx expedited shipments. FedEx expedited delivery times vary by service.

Not every hub and terminal is eligible for Sunday service, but that tends to be the more remote areas.
If you have a FedEx account representative they can provide you with a spreadsheet containing ZIP codes not eligible for Sunday service just to have on hand. Last time they provided us one it contained 32616 lines of data. Pulling one random ZIP (80612) from that list it covers 162.64 square miles with a staggeringly huge population of 430.
