So I removed all Expedited shipping options from every shipping template I have weeks ago, yet I just received an Expedited order last night. Any ideas how that can happen? The order came in at the old price I would charge for it ($7.99) too, so it’s like they used an old setting that is no longer even present on my shipping templates.

First, we would check all the templates one more time. Then we would check the template that that item is linked to.
Only thing we can think of is that maybe a customer put the item in their basket, selected Expedited and finally got around to finishing the check out.

No idea, but you know what? I got an order with an old price, too. I looked and looked and I do not have the price anywhere. It hasn’t been that price for many moons.

The same reason that ghost or zombie listings appear can cause this.
